ZUCCHELLI FORNI (ROTARY RACK OVEN)

Due to easiness of operation the Rotor ovens are ideal for installation in any bread or pastry shop. The heat exchanger with three turns exploits the heat produced in the combustion better, ensuring more uniform baking with lower consumption. Baking chamber and oven front in stainless steel, external panelling in painted sheet steel. Electric function or with gas/gas oil burner.
Control panel: eletromechanical, digital or computerized. New conception of the steam generator which grants abundant stream supply all over the baking rack. Three rack hooking systems: rotating platform, top hook or automatic lifting device.

ROTORFAN: with combustion chamber and burner on the left rear side

SPIRAL MIXER WITH FIXED BOWL MODEL SIFAV

The ideal machine for bakeries and pastry shops. The transmission of movement to the spiral can be direct of through a system of double pulleys in order to reduce the effort of the 2-speed
motor to the minimum. The double pulley allows also the working process with a very though dough type. The machine is equipped with a device for reversal, rotation by impulses and
stop of the bowl, when the spiral is still moving. Extra-thick steel carpentry, bowl, protection

WATER CHILLER

Water chiller with stainless steel AISI 304 structure. Internal tank thermally insulated by polyurethane rigid foam injected at high density. Inner pipeline of the coil in AISI 304 stainless steel. Removable Cover. Incorporated air condensing unit. The main feature of this new machine is the high performance in fast water cooling: from+18 C to +3 C with room temperature of +32 C of liters every approx. 15 minutes. It is particularly indicated to all users who want high performance having little spaces.

Automatic Bun Divider and Rounder Vitella

Automatic bun rounding dividers are machines that cut a piece of raw dough into small portions and, using an oscillating plate, subsequently roll each piece to obtain balls of the same weight and shape, all in a few seconds.
Hydraulic machine, with two cylinders for pressing, one cylinder for cutting and one for rounding. Control panel that allows adjustment of pressing, rounding and shaping chamber opening times. Knife cleaning button. Can store up to 9 different programs.

Work cycle
1. insert the plate manually;
2. close the front guard;
3. set the operating times (pressing, rounding and chamber);
4. press the Start buttons;
5. the machine presses, cuts and rounds automatically;
6. open the front guard;
7. remove the plate with the shaped balls.
